One of the most popular pita sandwiches is the falafel pita. Piping hot pita, stuffed with vegetables, crisp falafel, and tahini sauce, it is the ultimate lunch or light dinner.

Ingredients:



  • Falafel * See recipe below
  • Tahini Sauce* See recipe below or store bought
  • 6 pita bread loaves
  • 2 tomotoes, chopped
  • 1 onion sliced
  • 1/4 cup fresh parsley, finey chopped
  • 1/4 cup sandwich pickles (optional)

Preparation:

Wash and chop vegetables according to recipe. Set aside.

Prepare falafel or use falafel mix.

Heat large frying pan or griddle to medium high heat. Spray with cooking oil or coat with about 1 tablespoon olive oil. Heat pita for 2 minutes on each side. The pita may begin to brown a little.

Stuff pita with falafel and vegetables. Drizzle with tahini sauce.

Tahini sauce is made from tahini - a sesame seed paste. Tahini sauce is thinner and used in pita sandwiches, marinades, and dips. Tahini sauce is very easy to make. Store it in an airtight container in the refrigerator and it will keep for about two weeks.

Ingredients:



  • 1/2 cup tahini (sesame seed paste)
  • 3 gloves garlic, crushed
  • 1/2 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon parsley, finely chopped (optional)

Preparation:

In a food processor or mortar and pestle, combine garlic and tahini. Add kosher salt.

Remove from food processor and add olive oil and lemon juice. If too thick, add a teaspoon of warm water until desired consistency.

Mix in parsely

Serve immediately or refrigerate.

Fattoush is a popular salad, especially in Lebanon. The great thing about fattoush is that you can add and delete veggies from the recipe according to taste. Instead of pita bread, you can also use French or Italian bread.

Ingredients:



  • 5 cups toasted pita bread, torn into 1 inch pieces
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup green pepper, diced
  • 1 half head of romaine lettuce, torn into small pieces
  • 3 cloves garlic, crushed
  • 1/2 cup lemon juice
  • 3/4 cup olive oil
  • 1/4 cup fresh mint, chopped
  • salt and pepper to taste

Preparation:

For the Salad

In a large bowl, combine lettuce, bread, cucumber, tomatoes, green peppers, onions, and parsley together. Toss together.

For the Dressing

In a small bowl combine garlic, olive oil, lemon juice, and mint. Mix well.

Pour dressing over salad and serve.

Variations

You can add many spices to this according to your tastes. Some people like to add chick peas for a heartier salad.

Serve 4 large salads or 6 side salads.
